Smoky Miso Cauliflower Steaks
These smoky miso cauliflower steaks are bursting with flavour, with a paprika, miso, soy and maple syrup dressing and a sprinkle of coriander, chilli and sesame seeds. Serve with a fresh salad, baby new potatoes and a dollop of creamy hummus.

Preheat the oven to 180°C fan / 400°F. Slice the cauliflower into 2 steaks about 4cm / 1½″ thick — use the middle part as it’s larger and save the remainder for another dish.

In a small bowl, mix 4 tablespoons of the olive oil with the paprika, miso paste, vinegar, soy sauce and maple syrup; brush ¼ of the mixture over both sides of the cauliflower steaks. Place the steaks on a flat baking tray lined with baking parchment and bake for ⏱️ 15 minutes. Turn over and bake for another ⏱️ 15 minutes until tender but with a little bite.

Remove from the oven and brush another ¼ of the sauce over the steaks.

Place the remaining sauce and 2 tablespoons of olive oil in a frying pan, over medium heat. Add the sunflower seeds, pumpkin seeds and chilli flakes; fry for ⏱️ 2 minutes until it smells toasty.
