Place the peaches in a 4-5 QT slow cooker. Drizzle with lemon juice and sprinkle with flour, white sugar, brown sugar, cinnamon, and cornstarch. Stir to coat.

In a medium-sized bowl, combine the dry topping ingredients: flour, white sugar, brown sugar, baking powder, and salt. Whisk to combine. Toss the grated butter in the flour mixture. Stir in the boiling water, just until combined, leaving plenty of little lumps of butter.

Drop the topping over the peaches in the crockpot in spoonfuls. (I like to use my smallest cookie scoop to do this.) Stir together the remaining cinnamon and sugar and sprinkle it over the topping on the peaches.

Cover with the lid and cook on LOW for ⏱️ 3-4 hours, checking it only at the 3-hour mark. Resist the urge to open the crockpot and check it more frequently.

When the topping has set and the peaches are bubbling around it, remove the lid and allow the cobbler to rest for ⏱️ 15 minutes before serving. Serve warm with ice cream or whipped cream.
