Add carrots to a 5 or 6 quart slow cooker. If using whole carrots, peel and slice them into half-inch rounds. Spread them evenly.

Sprinkle brown sugar, salt, cinnamon, and pepper over the carrots. Stir to coat lightly.

Pour in the maple syrup and toss the carrots well until glistening.

Cut butter into small cubes and spread them over the carrot mixture. Do not stir yet.

Cover and cook on high for ⏱️ 3 hours, or on low for 5 to ⏱️ 6 hours, until fork tender. Stir once or twice if possible.

To thicken the glaze, remove the lid for the final ⏱️ 30 minutes on high, or pour liquid into a small saucepan and simmer over medium-high heat for about ⏱️ 5 minutes, whisking.
