In a 6 quart slow cooker, add 1½ pounds boneless chicken breast, 3 peeled and diced medium carrots, 3 diced stalks celery, 1 diced medium onion, 3 cloves minced garlic, 6 cups low sodium chicken broth, 1 teaspoon Italian seasoning, and 2 bay leaves. Cook on low for ⏱️ 4-6 hours.

Remove the cooked chicken from the slow cooker and shred it using two forks. Place it back into the slow cooker.
