Heat the olive oil in a large skillet over medium high heat; then add the diced chicken. Cook until the meat is no longer pink; then add the peppers, onions, garlic and rosemary.

Saute for ⏱️ 1-2 minutes until the onions start to become translucent; then add the rice, chicken broth, salt and pepper. Mix well, cover the pan with a lid and reduce the heat to low.

Simmer for ⏱️ 25-30 minutes until the liquid has been absorbed and the rice is cooked through. (If the rice is too hard, that means that the heat may have been too high causing the liquid to evaporate too quickly. If this happens, add a little more broth and cook until the rice is cooked through.)
