Simple Roasted Aubergine Sandwich
This roasted aubergine sandwich is so simple and makes such a delicious lunch. We love to use either roasted red pepper or sun-dried tomato hummus in this but it works well with any type.

Preheat oven to 200°C (fan) / 390°F.

Cut the aubergine and tomato into thin slices. Place the aubergine slices onto a baking tray (ensuring they're not overlapping) and drizzle with olive oil. Season with a pinch of salt. Cook for ⏱️ 30 minutes until soft. Once cooked, remove from the oven and set aside until needed.

When ready to assemble the sandwiches, spoon 1 heaped tablespoon of hummus on top of 2 pieces of bread. Top each with ½ of the roasted aubergine, ½ of the sliced tomato, some rocket and a crack of pepper; then sandwich together with another slice of bread.
