Simple Pancakes
These simple pancakes are our go-to. They couldn’t be simpler or easier to make, they’re always a huge hit and easy to adapt — try adding some frozen blueberries to the batter or a handful of chopped dark chocolate chunks. Serve with nut butter, fresh fruit, maple or warm chocolate sauce.

In a bowl, whisk together all of the pancake ingredients to form a smooth batter.

Warm some coconut oil in a pan over a medium heat. Once warm, spoon a large tablespoon of pancake batter into the pan, using a wooden spoon to spread out the mixture. We tend to cook 3 at a time in our pan.

Cook on one side for 3–⏱️ 4 minutes until golden, before turning and cooking on the other side for 2–⏱️ 3 minutes.

Repeat until the pancake mixture is finished.
