Simple Oat Scones
We made these scones for Easter. They’re a lovely afternoon tea idea if you’ve got something special happening. I love them served with a big dollop of coconut yogurt and our chia jam.

📝 Preparation Steps

Preheat the oven to 180°C / 160°C fan /350°F, fan setting.

Line a 12-hole muffin tray with melted coconut oil.

Place the porridge oats into a blender or NutriBullet. Blitz until you have a fine consistency.

In a large bowl, mix together the ground oats, flour, bicarb and spices until there are no lumps.

Once combined, add the maple syrup, melted coconut oil and almond milk and mix until a batter has formed.

Pour equal amount of the mixture into the muffin holes and bake for ⏱️ 20-25 minutes, until golden. To test whether they’re ready, put a knife into the middle, if it comes out clean they’re ready, if not place back into the oven for 5 more minutes.

Once cooked, leave the scones to cool for at least ⏱️ 10 minutes in their tins to firm up, then transfer to a wire rack to finish cooling or serve warm.
