Simple Chickpea Bowl

Place a pan over a medium heat and add a drizzle of olive oil. Once warm, add the onion, garlic and a pinch of salt. Cook for ⏱️ 5-10 minutes until soft.

Add the coriander seeds and paprika and cook for 2 more minutes before adding the chickpeas, tomatoes and lemon juice. Cook for ⏱️ 10 minutes until the tomatoes begin to break down. At this point stir through the tahini and mustard, adding a splash of water if the mixture becomes too thick.

Stir through the spinach and leave everything to cook for ⏱️ 5-10 minutes.

Once ready to serve, spoon the mixture into bowls and top with pepper and chilli flakes (if using).
