Drain and wash the chickpeas. Cut the avocado into bite-sized chunks. Peel and finely dice the red onion.

Place the drained chickpeas, red onion and avocado in a bowl and mix through the balsamic vinegar, lemon juice, a drizzle of olive oil and a large pinch of salt.

If you would like to add some crunchy croutons, place a frying pan over medium–high heat. Add a generous drizzle of olive oil and add the pieces of bread. Cook for about 5–⏱️ 6 minutes, tossing occasionally, until golden brown and crunchy.

Mix everything together well, before serving topped with a handful of chopped parsley.
