Drizzle some olive oil into a saucepan and add the onion; fry for 5–⏱️ 6 minutes until softened. Add the garlic and fry for ⏱️ 30 seconds until fragrant. Remove from the pan and place into a high-speed blender. In a bowl, combine the sunflower seeds and cashews; cover with boiling water until needed.

Fill a saucepan with water, add a pinch of salt and bring to the boil before turning down to a simmer; cook the pasta according to packet instructions.

Drain the sunflower seeds and cashews and add to the blender with the onions and garlic; add the oat milk, mustard, olive oil, lemon juice, nutritional yeast and maple syrup. Blitz into a smooth sauce. Pour over the macaroni, season with salt and plenty of black pepper, before serving.
