Shrimp Fra Diavolo with Spinach

Bring a stockpot of water to the boil. Season it generously with salt and cook the linguine al dente according to the package directions. When you go to drain the pasta, reserve 1 cup of the pasta cooking water.

Pat the shrimp dry with paper towels and toss with ¼ teaspoon of the crushed red pepper flakes and season with salt.

Pre-heat a large sauté pan over medium-high heat. Drizzle a little olive oil into the pan and sear the shrimp for ⏱️ 1 minute on each side. Transfer the shrimp to a bowl and set aside.

Add the shallots, garlic and anchovies to the pan. Stir in the remaining crushed red peppers flakes and dried oregano. Sauté for 1 to ⏱️ 2 minutes and then deglaze the pan with the vermouth or white wine. Add the tomatoes and simmer for ⏱️ 25 minutes.

Season the sauce to taste with salt. Return the shrimp to the pan and simmer very gently for 2 to ⏱️ 3 minutes. Stir in the baby spinach and wilt it into the sauce.

Drain the pasta, reserving 1 cup of cooking water. Add the cooked pasta to the sauté pan and toss to coat the pasta with sauce. If needed, add some reserved pasta water to loosen the sauce. Serve immediately with some crusty bread to mop up any sauce.
