In a large skillet over medium-high heat, melt butter until foaming. Add onions and cook until softened, about 3 to ⏱️ 5 minutes.

Stir in peas and carrots, season to taste with salt and pepper, and transfer to a broiler-safe 9-inch by 13-inch dish.

Adjust an oven rack to the upper-middle position and preheat oven to 375 degrees. In a large pot or saucepan, add potatoes and 1 tablespoon salt. Add cold water to cover potatoes by 1 inch. Over medium-high heat, bring to boil and partially cover pot.

Cook until potatoes are tender when pierced with a paring knife, stirring once or twice, about 10 to ⏱️ 15 minutes. Drain well, tossing in colander to remove excess water. Wipe pot dry.

Return potatoes to pot and mash to a uniform consistency. Using a rubber spatula, fold in melted butter mixture until just incorporated. Slowly stir in 3/4 cup hot milk. Add more milk, 1 tablespoon at a time, to adjust the consistency as desired. Season to taste with salt and pepper (I like 1/2 teaspoon salt and 1/4 teaspoon pepper).

Spread the mashed potatoes over the filling and smooth the top with a rubber spatula, or pipe the potatoes with a pastry bag and tip. Use the back of a spoon to create swirls or drag fork tines across the surface to make hatch marks. Brush the top lightly with beaten egg.

Bake until the filling is hot and bubbly, about ⏱️ 15 minutes. Cool ⏱️ 10 minutes before serving.
