Shawarma-Spiced Aubergine Wraps
This recipe features a brilliant mix of flavours and textures: the aubergine is roasted with paprika, cumin and cinnamon until tender; it’s then mixed with garlicky cherry tomatoes; and served in a warm wrap with creamy hummus, crunchy red onion, pickled gherkins and a sprinkling of fresh coriander.

Place the aubergine chunks in a large bowl and sprinkle over 1 tablespoon of sea salt flakes. Mix well and set aside for at least ⏱️ 30 minutes.

After ⏱️ 30 minutes, place a large pan over medium heat. Add the chopped garlic, tomatoes and a pinch of salt. Mix well and cook for 5–⏱️ 10 minutes until the tomatoes become really soft and form an almost paste-like consistency.

At this point, remove the aubergine chunks from the bowl and wipe off any excess salt or water. Mix the spices and aubergine through the tomato sauce. Cook again for 10–⏱️ 15 minutes until everything is soft.

To serve, place a dollop of hummus on the base of a warmed wrap, top with the aubergine mixture, gherkins and red onion. Sprinkle with fresh coriander and chilli flakes.
