Start by making the tomato sauce. Pre-heat a sauté pan on medium heat on the stovetop. Add the olive oil and the onion to the pan and sauté until it softens – about ⏱️ 5 minutes. Add the roasted red pepper, cumin, paprika and pepper flakes for a minute or two and then pour in the tomatoes and bring the mixture to a simmer. Season with salt and simmer for ⏱️ 10 minutes.

Meanwhile, pre-heat the oven to 400ºF.

Sprinkle the cheese onto the sauce and then crack the eggs into the pan on top of the sauce in four separate areas. Transfer the pan to the oven and bake until the eggs are just set – about 10 to ⏱️ 12 minutes, depending on how you like your yolks cooked.
