Preheat oven to 425 degrees F. Lightly oil two baking sheets.

Whisk together flours, sesame seeds, thyme, and salt in a bowl. Make a well in the center and add oil, honey, and 1 cup cold water. Stir with a wooden spoon until dough comes together. Turn out onto a lightly floured work surface and knead until dough is soft and supple, 4 to ⏱️ 6 minutes. Cover with plastic wrap and let rest, at room temperature, ⏱️ 30 minutes.

Divide dough into 4 pieces. Roll 2 pieces, one at a time, on a lightly floured work surface into a roughly 16"-x-12" rectangle. Transfer to prepared baking sheets. Lightly brush dough with oil. Season with flaky sea salt, if desired.

Bake, rotating sheets from front to back and top to bottom halfway through, until golden and bubbly, 8 to ⏱️ 12 minutes. Cool completely on baking sheets. Repeat with remaining dough.
