Sesame Aubergine & Hummus Salad
This slow-roasted aubergine dish is a real all-rounder – it’s simple to make, full of flavour and packed with goodness. The aubergine and onion are a great source of fibre, whilst the hummus and walnuts add protein, iron and omega-3s. We love this as part of a nourishing mezze spread with soft, warm flatbreads and herby falafel.

Preheat the oven to 140°C fan / 285°F. Season the aubergine wedges with salt and set aside whilst the oven warms up.

Place the aubergine and onion in a deep roasting tin and drizzle generously with sesame oil. Roast for 40—⏱️ 50 minutes until super soft and tender.

Meanwhile, toast the walnuts in a small frying pan over low heat for 4—⏱️ 5 minutes, until golden. Remove from the pan and roughly chop.

Spread the hummus out on a serving platter or large flat plate. Top with the roasted vegetables and scatter over the walnuts, mint, sesame seeds and chilli flakes (if using). Serve warm or at room temperature with toasted flatbreads.
