Seriously Sesame Noodles With Tofu & Broccoli
You may think you’ve had sesame noodles before, but we promise that you’ve never eaten any this good. Soba noodles are tossed in a fragrant dressing with our ‘ultimate tofu’ and fresh green broccoli, making a supremely satisfying dish. Enjoy warm for lunch or dinner; or cold as a salad, perfect for a picnic or barbecue.

Using clean hands, tear the tofu into bite-sized pieces. On a clean surface, sandwich the tofu between 2 sheets of kitchen paper. Press down to release as much water as possible. Repeat the process again with more clean, dry kitchen paper. If you have the time, repeat the process again — the more water you release from the tofu, the better it will taste as it will turn perfectly golden and crispy when cooked. Leave the tofu pieces between sheets of kitchen paper while you toast the sesame seeds.

Place a heavy-bottomed frying pan over medium–high heat. Add the sesame seeds and toast, tossing frequently for 2–⏱️ 3 minutes until golden and fragrant. Remove from the heat and place in a pestle and mortar. Grind for ⏱️ 2 minutes until broken down but with some whole pieces of seed remaining (if you don’t have a pestle and mortar, you can give the seeds a quick blitz in a blender or NutriBullet).

Heat a generous drizzle of olive oil in the same frying pan over medium–high heat. Add the dried tofu and season with a pinch of salt. Cook for 8–⏱️ 10 minutes, stirring every ⏱️ 2 minutes, until golden and crispy. Remove from the heat.

While the tofu is frying, place the ground, toasted sesame seeds in a large bowl; add the sesame oil, tamari, maple syrup, rice vinegar, chilli flakes and sliced spring onions. Set aside.

Bring a large pot of water to the boil and add the noodles. Cook according to packet instructions. Add the broccoli for the final minute of cooking, then drain along with the noodles.

Add the noodles and broccoli to the large bowl with the dressing; toss to coat well. Add the cooked tofu and stir to combine. Serve while still warm.
