Make the starter: In a medium mixing bowl, combine flour and yeast and stir in water. Cover with a clean, damp kitchen towel and set it aside -- 12 to ⏱️ 24 hours. A loose, bubbly batter will form.

Marinate the grapes: In a small bowl, combine grapes and wine and let stand -- ⏱️ 2 hours to overnight. Strain and reserve wine for another use.

Make the dough: In a large mixing bowl or food processor fitted with metal blade, combine flour, sugar, yeast, and salt. Add the water, olive oil, and starter and mix to a soft, sticky dough. By hand, on a lightly floured surface, knead dough until smooth, elastic, and silky -- about ⏱️ 10 minutes -- or in food processor, mix about 45 more seconds. Shape dough into a ball.

Proof the dough: Coat a large bowl with vegetable oil and add dough, turning to coat all sides. Cover with a clean, damp kitchen towel and let rise in a warm, draft-free place until doubled in size -- about 11/⏱️ 2 hours.

Form the loaf: Punch the dough down, add the anise seeds, and knead to incorporate. Form the dough into a tight ball and let it rest ⏱️ 10 minutes. On a lightly floured surface, use a rolling pin to shape dough into a 14-inch oval. Coat a baking sheet with the vegetable oil and place dough on the sheet. Place the grapes on top of dough and gently press them into the dough. Cover with the damp towel and let rise until doubled in size -- about ⏱️ 30 minutes.

Bake the bread: Preheat oven to 400 degrees F. Sprinkle the loaf with granulated brown sugar and bake in the middle of the oven until crust is golden and the grapes are lightly browned -- about ⏱️ 45 minutes. Remove from oven and immediately rub surface with 1 tablespoon of butter. Cool on a wire rack. Serve at room temperature. Store in an airtight container.
