Cook Quinoa

Cook quinoa in salted water according to packing instructions.

Hard Boil Eggs

Bring a medium pot of water to a boil. Very carefully lower eggs into the boiling water.Cook for ⏱️ 6-7 minutes then remove from the pot and transfer them to an ice bath. After ⏱️ 2 minutes remove them from the ice bath and set aside.

Add olive oil to a large skillet. Add in mushrooms and sauté for ⏱️ 4-5 minutes or until they are golden brown and start to get crispy. Remove from the pan and set aside.

To the same pan add the remaining tablespoon of olive oil.Add in the spinach / arugula mix and saute until wilted.

To assemble the bowls start by adding 1/2 cup of quinoa to each bowl. Then divide the mushrooms and spinach between the two bowls. Top each bowl with a peeled jammy egg, pesto and a sprinkle of salt, pepper and red pepper flakes. Enjoy!
