Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.

On a lightly floured surface, roll out puff pastry and cut into rectangles roughly 4 by 6 inches.

In a large mixing bowl, combine the eggs, cheese, cooked turkey bacon, caramelized onions, herbs, and seasonings. Stir well.

Spoon the filling onto one half of each pastry rectangle, leaving a small border around the edges.

Fold the other half of the pastry over the filling. Press down along the edges with a fork to crimp them shut.

Brush the top of each pastry with an egg wash (whisked egg with a splash of water). Bake for 18 to ⏱️ 22 minutes until golden brown. Allow to cool for ⏱️ 5 minutes before serving.
