Start by adding the carrots, celery, onion and garlic to a mini food processor and pulse until finely chopped.

Add the butter and oil to a large skillet, melt over medium heat; then add the vegetables and cook ⏱️ 1-2 minutes.

Next add the sausage, breaking apart the meat; then cook ⏱️ 5-7 minutes or until the sausage is no longer pink.

Add the milk and wine, stir; then cook until most of the liquid has evaporated; approximately ⏱️ 5 minutes.

Finally, add the tomatoes (with the juices), tomato paste and seasonings. Reduce heat to low, cover the pan and simmer ⏱️ 30-40 minutes; stirring occasionally. (Yields: 4 cups)
