Salty Sweet Tofu Bowl

Preheat the oven to 200°C fan / 220°C.

Slice the tofu into bite-size pieces and pat dry with a piece of kitchen roll. Place into a bowl with the drained lentils. In a small bowl whisk together the olive oil, maple syrup and smoked paprika, pour over the lentils and tofu and toss to combine. Tip out onto a baking tray and sprinkle with salt and pepper. Place in the oven and bake for ⏱️ 20 minutes, removing halfway through to give a stir to ensure even browning.

Remove from the oven and allow to cool slightly while you assemble the salad.

Arrange half each of the pepper, tomatoes, lettuce, carrot and top with half of the baked tofu. Drizzle with ginger tahini dressing and eat immediately. Reserve the other half of the vegetables, lentil and tofu mix for lunch on day 7. Place them in an air tight container.
