Salted Maple Syrup Pie

Make Pie: Preheat oven to 375°F with the racks in the middle and bottom positions. Line a rimmed baking sheet with aluminum foil. On a lightly floured work surface, roll dough to a 12-inch circle. Fit in the bottom and up the sides of a 9-inch pie plate. Trim excess to 1 inch, fold edges under, and crimp. Prick bottom of piecrust several times with a fork. Freeze ⏱️ 20 minutes. Line piecrust with aluminum foil or parchment paper, and fill with pie weights, rice, or dried beans, pressing all the way to the edge.

Place piecrust on prepared baking sheet. Bake, on bottom rack, ⏱️ 20 minutes. Carefully remove foil and pie weights. Bake, until edges are light golden brown and bottom of pastry is dry, 5 to ⏱️ 10 minutes. Cool completely on a wire rack.

Reduce oven to 350°F. Place flour, maple syrup, butter, cream, brown sugar, eggs, vanilla, and salt in a blender. Blend on high until ingredients are combined and smooth, about ⏱️ 30 seconds. Pour into piecrust. Wrap edges of piecrust in aluminum foil. Bake, on middle rack, until filling is puffed and the top is set and dry to the touch (pie will still have a slight jiggle), 40 to ⏱️ 50 minutes. Cool on a wire rack.

Make Maple Whipped Cream: Whisk cream, maple sugar, and salt with an electric mixer on medium-high speed until soft peaks form, about ⏱️ 1 minute. Makes 2 1/2 cups.

Just before serving, sprinkle pie with flaky sea salt. Serve with Maple Whipped Cream alongside.
