Preheat oven to 180°C fan / 400°F and line a 900g / 2 lb loaf tin with baking parchment.

Add the onions, celery and carrots to a food processor and pulse until roughly chopped (or roughly chop by hand). Pour the oil into a large frying pan and add the chopped vegetables. Fry for 8–⏱️ 10 minutes until softened.

Add the garlic and sage and fry for ⏱️ 30 seconds until fragrant.

Pour the mixture into a bowl with the chopped nuts, 2 tablespoons of water, the cornflour, lentils and apricots. Stir and season to taste.

Tip the mixture into the prepared tin, level with a spoon and bake for ⏱️ 40 minutes. Remove from the oven and leave to cool in the tin for ⏱️ 30 minutes; then tip out onto a serving plate and slice.
