Roasted Sweetcorn & Jalapeño Dip
This spicy dip is a real crowd pleaser, we love to serve it with a big bowl of crunchy tortilla chips. The roasted sweetcorn balances the flavour from the spicy Jalapeños, while the roasted garlic and butter beans create a creamy, delicious texture. We love to serve this with diced red onion sprinkled on top for an added crunch, but it also tastes delicious without.

Preheat the oven to 200C (390F), fan setting.

Place the sweetcorn onto a baking tray and add 1 teaspoon of paprika, a drizzle of olive oil and a pinch of salt. Mix well and cook for ⏱️ 10-15 minutes until golden. Once cooked, remove from the oven and place into a blender.

Add the rest of the ingredients, apart from the almond milk, to the blender and pulse until smooth.

Add the almond milk bit by bit until you reach the consistency you like best.
