Position a rack in the upper third of the oven and preheat to 450 degrees Fahrenheit. Wash sweet potatoes well. Cut the two unpeeled sweet potatoes crosswise into rounds about one inch thick. Place slices in a large bowl.

To the bowl with sweet potato slices, add melted butter, olive oil, chopped fresh herbs, salt, and pepper. Toss to coat every slice. Arrange seasoned sweet potatoes in a single layer in a nine by thirteen inch metal baking pan.

Roast for about ⏱️ 35 minutes, flipping each slice halfway through for even browning.

Whisk finely chopped garlic into the vegetable broth. After ⏱️ 35 minutes, remove the pan and pour the garlic broth mixture evenly over the sweet potatoes. Sprinkle tops with three tablespoons of grated Parmesan cheese.

Return to the oven for another 12 to ⏱️ 15 minutes, until broth is absorbed and potatoes are very tender. Transfer to a serving platter, drizzle with any remaining buttery, herby mixture, and garnish with more Parmesan cheese if desired. Enjoy warm.
