Place baking racks in the upper and lower thirds of the oven and preheat to 425°F. Line two large rimmed baking sheets with foil and brush each with 1/2 tablespoon of olive oil.

Slice sweet potatoes into 1/2-inch thick coins. Arrange in a single layer on the prepared baking sheets. Brush the tops with the remaining 1 tablespoon of olive oil and sprinkle with salt and pepper.

Bake for ⏱️ 15-20 minutes, rotating pans and switching racks halfway through. The bottoms should be golden brown. Remove from oven, flip each slice, and roast for another ⏱️ 5-8 minutes until tender.

While the sweet potatoes roast, whisk together the apple cider vinegar, Dijon mustard, and maple syrup in a small mixing bowl. Finely chop the toasted pecans, shallot, apple, and cranberries. Add them to the bowl with the dressing and chopped rosemary. Toss to coat, then gently fold in half of the crumbled goat cheese.
