Roasted Summer Salad
If you’re looking for a simple summer salad then this is what you need – it’s bright and colourful with a simple citrus dressing. It’s perfect as a side dish at a BBQ, alongside our miso sesame skewers.

📝 Preparation Steps

Drizzle 2 tablespoons of olive oil over the vegetables and mix well to ensure each piece is coated. Place a griddle pan over a medium heat.

Once warm, add the vegetables and cook, undisturbed, for ⏱️ 5 minutes, before turning over and cooking on the other side for ⏱️ 5 minutes. You will need to do this in a couple of batches.

While the vegetables cook, make the dressing by placing all of the ingredients into a mug and mix until smooth.

Once the vegetables have cooked, remove and mix through the dressing.
