Roasted Red Pepper & Walnut Spaghetti
This red pepper and walnut spaghetti is a perfect midweek supper for friends. It’s easy to cook but the sauce has a wonderfully rich flavour thanks to the maple, balsamic, chilli, lemon, garlic, onion and tomato, which are mixed with the roasted peppers and walnuts.

Preheat oven to 200°C fan / 400°F. Place the peppers onto a baking tray and drizzle with olive oil. Roast for 25–⏱️ 30 minutes until charred, adding the walnuts for the last ⏱️ 5 minutes. Then remove and leave to cool.

Cook the pasta according to packet instructions, then drain and return to the pan.

While the pasta cooks, place a pan over medium heat and add a drizzle of olive oil. Add the chopped onions and garlic and cook on a low heat for 5–⏱️ 10 minutes until soft.

Once cooked, remove from the heat and place into a food processor, along with the roasted red peppers, roasted walnuts, tinned tomatoes, lemon juice, balsamic vinegar, maple syrup, chilli flakes, salt and pepper; pulse until smooth.

Pour the roasted red pepper sauce into the drained pasta and mix well. Sprinkle with chopped coriander and serve.
