Roasted Red Pepper & Butter Bean Dip
Colourful, creamy and packed full of flavour. This is our favourite dip to enjoy with crunchy crackers or a side of salad. It's so simple to make and only uses a handful of ingredients. We use roasted red peppers from a jar to make it really quick but you can also roast your own red peppers in the oven.

Place the drained butter beans, roasted red peppers, roasted garlic cloves, lemon juice, tahini, olive oil, cashews and a sprinkling of salt into a powerful blender and blend until a smooth dip forms - adding a dash of water, bit by bit, if needed to make the mixture blend together.
