Roasted Portobello & Caramelised Onion Sandwich
This sandwich is the ultimate working from home lunch. The mushrooms are roasted in balsamic vinegar and mixed herbs and taste delicious with the soft caramelised onions and fresh rocket. We love to add a big dollop of hummus but it's also delicious on its own.

Preheat the oven to 190C (375F), fan setting.

Place the portobello mushrooms onto a baking tray and drizzle with olive oil, 1 tablespoon of balsamic, the mixed herbs and a pinch of salt. Mix well and cook for ⏱️ 20 minutes.

While the mushrooms cook, place a pan over a medium heat and add a drizzle of olive oil. Once warm, add the sliced onions and a pinch of salt. Cook for ⏱️ 10 minutes until the onions are soft. At this point, add the coconut sugar and mix well. Continue to cook the onions for a further ⏱️ 5-10 minutes until golden and caramelized.

Assemble the sandwiches; spoon 1 tablespoon of hummus onto the bottom of 2 pieces of bread and top each with half of the sliced tomatoes, mushrooms, caramelised onions and a small handful of rocket. Top each with another piece of bread.
