Toss the tomatoes in the oil and vinegar along with the garlic, thyme, salt and pepper and spread the mixture out over the bottom of an oven proof pan or baking dish.

Roast in a preheated 425F/220C oven until the tomatoes just start to brown on the edges, about ⏱️ 20 minutes.

Sprinkle on the cheese and place it under the broiler until it is melted and bubbling, about ⏱️ 2-5 minutes. (Watch it carefully.)

Remove from oven and serve right away with bread for dipping and scooping.
