Roasted Cauliflower Salad With Tahini Dressing
This is one of my favourite salad recipes — the colours and flavours are fantastic. The roasted cauliflower makes the most delicious base, which is then piled up with crunchy chickpeas and creamy tahini drizzle, creating something really amazing.

Preheat oven to 200°C fan / 400°F. Place the cauliflower in a large dish and toss with olive oil, garlic, a generous pinch of cumin, cinnamon and salt.

Toss the drained chickpeas in olive oil and a pinch of cumin and add to the dish with the cauliflower.

Cook for 25–⏱️ 30 minutes, or until the cauliflower is charred on the outside and soft in the middle.

Make the dressing by mixing together all of the ingredients until smooth.

Once everything is cooked, place the cauliflower and chickpeas in a serving dish; drizzle over the salad dressing. Top with a handful of pomegranate seeds, coriander and roasted almonds, if using.
