Roasted Cauliflower Filo Pie
Using only a few simple seasonal ingredients, this spectacular cauliflower filo pie is the perfect centrepiece for your festive roast. It can be assembled in advance, leaving you free to enjoy time with friends and family. Simply prepare the pie up until the point of baking (you can do this up to two days beforehand), and pop it in the oven when you’re ready.

Preheat the oven to 200°C fan / 430°F.

Place the cauliflower, along with the leaves, onion, thyme and garlic on a large baking tray. Drizzle with olive oil and season generously; cook for 20–⏱️ 25 minutes until deeply golden.

Transfer one-third of the veg (including the cauliflower leaves), garlic cloves, 3–4 tablespoons of olive oil and 2 tablespoons of water to a high-speed food processor. Blitz until smooth, adding more water to loosen as needed. Season to taste.

To assemble the pie, place a sheet of filo pastry on a large shallow baking tray, or baking sheet, and brush lightly with oil. Pop the next sheet on top, rotated 45° clockwise, and brush lightly with oil. Repeat with the remaining pastry, making a 45° clockwise turn each time — imagine that you’re making a star pattern and the sheets of pastry are the points of the star.

Transfer the cauliflower puree to the centre of the pastry and spread out into a circle (about 20cm diameter). Pile the remaining veg on top, along with the almonds and pumpkin seeds. Using your hands, scrunch up the edges of the pastry to create an open parcel — drizzle with a little olive oil if you like.

Reduce the oven temperature to 180°C fan / 390°F. Bake for 20–⏱️ 25 minutes until crisp and golden. Scatter over a handful of parsley (optional) and a pinch of sea salt flakes before serving.
