Adjust an oven rack to the middle position and preheat oven to 450 degrees. In a large bowl, add cauliflower, olive oil, garlic, and salt and pepper (I like at least Β½ teaspoon salt and ΒΌ teaspoon pepper) and toss until evenly coated.

Transfer to rimmed baking sheet and spread in an even layer. Roast until lightly browned in some places but still crispy, about 20 to β±οΈ 25 minutes. Sprinkle with Parmesan cheese and serve with lemon if desired.
