Roasted Cauliflower, Chickpea & Pesto Rice
We love to make a big batch of our roasted almond pesto to mix through this salad but you can use whichever pesto you like best. The combination of roasted cauliflower, chickpeas, avocado and pesto taste delicious, with a squeeze of lemon juice adding a citrus kick to bring it all together.

Preheat the oven to 190C (375F), fan setting.

Cook the rice according to the instructions on the pack.

Place the cauliflower florets and drained chickpeas into a large baking tray and drizzle with olive oil, a pinch of salt and the cumin. Mix well before cooking for ⏱️ 25 minutes.

Once cooked, remove from the oven and mix through the pesto, mixed leaves, lemon juice, rice and a pinch of pepper.

Spoon into bowls before topping with the chunks of avocado.
