Heat the oil in a pan over medium-high heat, add the onions and cook, stirring, until they turn a deep golden brown, about ⏱️ 30 minutes, before setting aside.

Meanwhile, toss the brussels sprouts in the olive oil, salt and pepper, spread them out in a single layer on a baking sheet and roast in a preheated 400F/200C oven until lightly golden brown, about ⏱️ 15-20 minutes, flipping half way through.

Meanwhile, melt the butter in a large pan over medium heat, add the halloumi and fry until lightly golden brown on both sides, about ⏱️ 6-10 minutes before adding the lemon juice and removing from the heat.

Assemble the sliders by skewering half a brussels sprout on a toothpick followed by some harissamu, caramelized onions, halloumi and another half of brussels sprout.
