Preheat oven to 400 degrees Fahrenheit and line a baking dish with aluminum foil. Remove the stems and tops of the 4-6 beets and peel them.

Chop the beets to ½ inch thick cubes. Place the chopped beets in the prepared baking dish. Drizzle with 2 tablespoons olive oil and salt and pepper. Fold up the edges of the foil to seal.
