Roasted Aubergine & Peanut Traybake

Preheat the oven to 180°C fan / 350°F.

Place the aubergine and sweet potato wedges in a bowl and toss with the spices, olive oil, maple syrup and some salt, until everything is evenly coated. Transfer to a large baking tray and roast for ⏱️ 10 minutes.

Add the aubergines to the tray, ensuring they’re evenly spread across. Roast for 35–⏱️ 40 minutes, until the veg is tender and starting to turn a little golden brown.

To make the dressing, simply whisk together all the ingredients until smooth.

To finish, drizzle the dressing over the veg. Top with the herbs, chilli, spring onions, peanuts and sesame seeds. Serve with a green salad and/or steamed jasmine rice.
