Start by taking a large heavy bottomed saucepan and placing it over medium heat. Pour in your quart of whole milk. Heat the milk until it reaches 195 degrees Fahrenheit. Use a kitchen thermometer and stir almost continuously, scraping the bottom of the pan often to prevent burning or scalding.

In a small bowl, whisk together the all purpose flour, granulated sugar, and kosher salt. Set aside.

In another small saucepan, gently melt your half cup of salted butter over medium heat. You want it completely liquid but not browned. Turn off the heat and let it sit.

Once the milk hits 195 degrees, stir your flour mixture into the melted butter to form a thick paste (a roux). Add this paste to the heated milk while stirring constantly. Keep stirring until the milk starts to boil. Turn the heat down to low and cook for about 5 more minutes, stirring often, until it transforms into a thick, smooth pudding.

Remove from heat. Spoon the warm Rømmegrøt into individual bowls. Drizzle some extra warm melted butter over the top and add a very generous sprinkle of cinnamon sugar. Enjoy immediately!
