Rich Mushroom Soup
This mushroom soup is so simple to make and deliciously rich in flavour. We use oyster mushrooms as we find they give a really strong mushroom flavour, but you can use whatever mushrooms you have at home. We love to serve this with a dollop of coconut yoghurt, a sprinkle of parsley, flaked almonds and a crack of fresh pepper on top.

Place a large pan over a medium heat and add a drizzle of olive oil. Once warm, add the onion, garlic and a pinch of salt and cook for ⏱️ 5-10 minutes until soft. Once soft, add the mushrooms and mix well. Leave to cook for ⏱️ 5-10 minutes until the mushrooms feel soft and reduce in size.

At this point, stir through the butter beans, almond butter, veggie stock cube, miso paste and coconut milk. Mix well and leave to simmer for ⏱️ 10 minutes.

Pour the mixture into a powerful blender or use a hand blender to blend the mixture until it reaches a smooth consistency.

Once smooth, pour the mixture back into a pan and warm through over a medium heat - you may want to add a dash of almond milk, bit by bit, until you reach the consistency you like best.
