Combine rhubarb, sugar, ginger, and ¾ cup water in a medium saucepan. Boil over medium-high heat, stirring often, until sugar is dissolved and rhubarb begins to soften, 2 to ⏱️ 3 minutes. Remove from heat and let steep ⏱️ 30 minutes.

Discard ginger. Puree mixture in a blender until smooth; strain through a fine mesh sieve, and discard solids. Chill completely.

Divide syrup among 8 Champagne flutes and top with prosecco. Serve immediately.
