Regular Sunbutter Cookies

Pre-heat the oven to 350°F.

Cream the butter, brown sugar and white sugar together with an electric mixture until fluffy. Add the sunbutter, egg and vanilla and beat to combine. In a separate bowl, combine the flour, cinnamon, baking soda and salt. Add the wet ingredients to the dry ingredients, folding together until just combined.

Roll 2 tablespoons of dough at a time into balls and place them on a baking sheet 2-inches apart. Flatten the balls slightly with a fork making a crisscross pattern on top. Transfer the baking sheet to the oven.

Bake in the center of the oven at 350°F for 8 to ⏱️ 10 minutes.

Allow the cookies to cool on the baking sheet for ⏱️ 5 minutes and then transfer them to a cooking rack.

Store in an airtight container.
