In a 1-quart mason jar, layer a few cucumber slices, some of the dill, some of the mustard seeds and a little of the scallions.

Continue layering the cucumber slices, dill, mustard seeds and scallions, packing everything in as you go. Sprinkle in the salt and pour in the white wine vinegar. Turn the jar over a few times to mix, then add enough cold water to cover the ingredients.

Refrigerate for at least ⏱️ 8 hours before eating. They'll keep in the refrigerator for up to 2 weeks.
