Combine the strawberries, 2 tablespoons of the honey, juice of 1/2 lemon, and 2 tablespoons water in a blender. Blend until smooth, about ⏱️ 30 seconds, then press through a fine mesh strainer into a liquid measuring cup. Divide between six 3-ounce pop molds (about 2 tablespoons each). Freeze until just set, about ⏱️ 45 minutes.

In a medium bowl, whisk together the Greek yogurt, 2 tablespoons of the honey, the vanilla extract, and 2 tablespoons water. Divide between the pop molds (about 2 tablespoons each). Freeze until just set, about ⏱️ 45 minutes.

Combine the blueberries, 2 tablespoons water, food coloring (if using), and the remaining 2 tablespoons honey and juice of 1/2 lemon in a blender. Blend until smooth, about ⏱️ 30 seconds, then press through a fine mesh strainer into a liquid measuring cup. Divide between the pop molds (about 2 tablespoons each). Insert the sticks and freeze until solid, about ⏱️ 4 hours.

Once frozen solid, unmold by running warm water over the molds until the pops loosen, 20 to ⏱️ 30 seconds (alternatively, you can immerse individual pop molds in a glass of warm water). Pull the pops out of the molds using the sticks and serve immediately.
