Preheat the oven to 350˚F. Line 2 baking sheets with parchment paper. Combine the cake mix, melted butter and eggs in a stand mixer fitted with the paddle attachment on medium speed until well combined, about ⏱️ 30 seconds.

Add the white chocolate chips and 1 cup of the chopped peppermint bark and mix on low speed until incorporated.

Scoop the dough into 1½-tablespoon-size balls and arrange 2 inches apart on the prepared baking sheets. Top each ball with some of the remaining ¼ cup chopped peppermint bark. Bake until lightly browned around the edges, 10 to ⏱️ 12 minutes. Let cool for ⏱️ 2 minutes on the baking sheets, then remove the cookies to racks to cool completely.
