Raw Espresso Brownies
These brownies taste like heaven. They are unbelievably wonderful, just so sweet, gooey and rich. No matter how many hundreds of times I make them I still can’t quite believe how amazingly they turn out and how easy they are – just five ingredients in a food processor whizzed for a couple of minutes. You’re going to love these!

Simply blend the pecans in a food processor until they form a crumbly mixture.

Add the dates, cacao, espresso, coconut oil and maple syrup and blend again.

Once it’s very sticky place the mixture into a baking tray and freeze for about an hour to set.

Once set, remove from the freezer.

Gently melt all the icing ingredients together, leave to cool before spreading across the brownies.

Cut into individual brownies, before storing in the fridge.
