These raw energy bars are packed full of delicious and nutritious ingredients. We love to make a batch and keep them in the fridge to enjoy throughout the week. If you don't have all of the ingredients you can add any similar ingredients you have at home - sunflower seeds and cashews will also taste delicious.

Place the dried mango into a bowl and cover with boiling water. Leave to soak for ⏱️ 10 minutes to soften.

After ⏱️ 10 minutes, drain the water from the dried mango and place into a powerful food processor.

Add the dried apricots and blend until a thick mixture comes together.

Add the pistachios, almonds, porridge oats and chia seeds and blend again until the mixture comes together, with a few small chunks.

Line a loaf tin with baking parchment and spoon in the mixture. Smooth over with the back of a spoon and place in the fridge to set for at least ⏱️ 1 hour.

Once the mixture holds its shape, cut into small bars or bite-sized chunks. Enjoy or store in the fridge in an airtight container for up to a week.
