We’ve been making variations on our energy balls for years, and for any coconut fans these are the ones you need. The mix of dessicated coconut with almond butter and a pinch of salt is so delicious, especially combined with the sweet, chewy nature of the dates and the creaminess of the blended almonds.

Start by placing the almonds and desiccated coconut into a food processor and pulsing until a flour forms, about ⏱️ 2 minutes.

Add the almond butter, cacao powder, salt and dates and pulse again until a sticky paste forms, about ⏱️ 5 minutes.

Scatter any reserved desiccated coconut over a baking tray.

Using a large spoon, scoop out equal amounts of the mixture and roll into small balls using your hands.

Once you have your balls, roll them in the desiccated coconut to form a coating on the outside.
